Is a 20-bar espresso machine automatically better than a 15-bar model? No. The number usually describes the pump’s maximum rating, not the pressure held at the coffee puck during extraction. What matters more than the biggest pressure number?

Ask the supplier where pressure is measured and how it is regulated. A machine that briefly spikes high but cannot hold a useful range is not improved by a larger number on the carton.
Temperature stability
Pressure gets attention, but unstable water temperature can change flavor from cup to cup. Run several extractions in sequence and record warm-up time, outlet temperature and recovery time. For a home appliance range, repeatability is often more valuable than a dramatic first-shot demo.
